And quite seriously so (laughs).<\/p> \r\n \r\n<p><strong>Shohei Uchiyama:<\/strong>It all started with the green onion ramen at a local ramen shop. \r\nThat bowl came loaded with an outrageous amount of black pepper.<br> \r\nAt first it tasted overwhelmingly spicy, but before I knew it, I was hooked. From then on, I began putting pepper on everything. <\/p> \r\n \r\n<p class=\"browntext\">\uff0d\uff1aOn everything\u2026?<\/p> \r\n \r\n<p><strong>Shohei Uchiyama:<\/strong>When I sprinkled it on milk, it turned into something like a soup. \r\nOn natto, together with olive oil. It works with vanilla ice cream, and even with chocolate. Occasionally, I\u2019ll add it to beer as well.<br> \r\nDairy products, fermented foods, and meat are basically guaranteed to work. As for carbonara, I practically make it just to eat pepper (laughs). I also like the sight of pepper settling at the bottom of a bowl after finishing a soup.<\/p> \r\n \r\n<p class=\"browntext\">\uff0d\uff1aDo you have a particular pepper you recommend?<\/p> \r\n \r\n<p><strong>Shohei Uchiyama:<\/strong>Right now, I recommend fully ripened pepper from KURATA PEPPER.<\/p> \r\n \r\n<img decoding=\"async\" src=\"https:\/\/www.utsuwa-hanada.jp\/hanada\/wp-content\/uploads\/2022\/08\/20220803-1_02.jpg\" alt=\"Dear Likers Episode #001 Pepper\"> \r\n \r\n<p class=\"browntext\">\uff0d\uff1aYour interest even led you to making your own pepper mills.<\/p> \r\n \r\n<p><strong>Shohei Uchiyama:<\/strong>At first, I collected mainly antique mills from overseas.  \r\nMany were either from France, a major place of consumption, or from producing regions in Southeast Asia. But I noticed there were surprisingly few options made of wood. So I decided to make my own.<\/p> \r\n \r\n<img decoding=\"async\" src=\"https:\/\/www.utsuwa-hanada.jp\/hanada\/wp-content\/uploads\/2022\/08\/20220803-1_03.jpg\" alt=\"Dear Likers Episode #001 Pepper\"> \r\n \r\n<h3>It Began with a Fan Letter<\/h3> \r\n<p class=\"browntext\">\uff0d\uff1aWhat about the grinding mechanism inside?<\/p> \r\n \r\n<p><strong>Shohei Uchiyama:<\/strong>The grinding function is almost entirely determined by the internal burr. Since I can\u2019t manufacture that part myself, I use the burrs made by IKEDA, a pepper mill manufacturer. I also wanted to use something made in Japan.<\/p> \r\n \r\n<img decoding=\"async\" src=\"https:\/\/www.utsuwa-hanada.jp\/hanada\/wp-content\/uploads\/2022\/08\/20220803-1_04.jpg\" alt=\"Dear Likers Episode #001 Pepper\"> \r\n \r\n<p class=\"browntext\">\uff0d\uff1aIt\u2019s impressive that you were able to obtain just the burrs.<\/p> \r\n \r\n<p><strong>Shohei Uchiyama:<\/strong>I\u2019ve long used IKEDA\u2019s pepper mills myself. When I decided to start making my own, I sent them a fan letter with photos of the mills I had made. They kindly wrote back and agreed to supply me with the burrs separately. I can\u2019t thank them enough.<\/p> \r\n \r\n<p class=\"browntext\">\uff0d\uff1aThe burr is the heart of a pepper mill.<\/p> \r\n \r\n<p><strong>Shohei Uchiyama:<\/strong>Sharpness and durability are essential, but I also think the sensation matters. IKEDA\u2019s burrs grind with a satisfying, steady feel. Rather than crushing or smashing, it feels like cutting.<br> \r\nThe ground pepper looks different, and the aroma seems to bloom more softly. \r\nKURATA PEPPER\u2019s peppercorns are relatively large, and they pair especially well with these burrs.<\/p> \r\n \r\n<img decoding=\"async\" src=\"https:\/\/www.utsuwa-hanada.jp\/hanada\/wp-content\/uploads\/2022\/08\/20220803-1_05.jpg\" alt=\"Dear Likers Episode #001 Pepper\"> \r\n \r\n<h3>The Shape of a Pepper Mill<\/h3> \r\n<p class=\"browntext\">\uff0d\uff1aHow do you decide on the shape when making a pepper mill?<\/p> \r\n \r\n<p><strong>Shohei Uchiyama:<\/strong>I essentially make what I want to make. I draw inspiration from the legs of Windsor chairs, the legs of low tables, and even kokeshi dolls that I\u2019ve always liked.<\/p> \r\n \r\n<p class=\"browntext\">\uff0d\uff1aThat\u2019s where your ideas come from. Quite surprising. Perhaps when you love pepper this much, any cylindrical object starts to look like a pepper mill (laughs).<\/p> \r\n \r\n<p><strong>Shohei Uchiyama:<\/strong>There\u2019s some truth to that (laughs). After shaping it as I like, I ask my wife for her opinion. Left to myself, I tend to make them thicker and thicker, and she often points that out.<\/p> \r\n \r\n<img decoding=\"async\" src=\"https:\/\/www.utsuwa-hanada.jp\/hanada\/wp-content\/uploads\/2022\/08\/20220803-1_06.jpg\" alt=\"Dear Likers Episode #001 Pepper\"> \r\n \r\n<p class=\"browntext\">\uff0d\uff1aDo you have an ideal vision of what a pepper mill should be?<\/p> \r\n \r\n<p><strong>Shohei Uchiyama:<\/strong>I don\u2019t think that\u2019s something I can fully define. Once I started, I realized people expect very different things from a pepper mill. Appearance, how it feels in the hand, weight, material, texture, height\u2014shorter for the dining table, taller for cooking.<br> \r\nWhat surprised me was how many people care about capacity. Some have even asked for portable versions.<\/p> \r\n \r\n<img decoding=\"async\" src=\"https:\/\/www.utsuwa-hanada.jp\/hanada\/wp-content\/uploads\/2022\/08\/20220803-1_07.jpg\" alt=\"Dear Likers Episode #001 Pepper\"> \r\n \r\n<h3>A certain Looseness something that invites affection<\/h3> \r\n<p class=\"browntext\">\uff0d\uff1aHow do you choose the wood you use?<\/p> \r\n \r\n<p><strong>Shohei Uchiyama:<\/strong>At present, I choose woods that are not too soft\u2014generally harder hardwoods. Maple, cherry, black walnut, chestnut\u2014around twenty species at the moment.<br> \r\nPepper mills can be made from almost any wood, and they work well even with small-diameter logs. \r\nRecently, I\u2019ve built relationships with local forestry workers, so if possible, I\u2019d like to use wood from the area.<\/p> \r\n \r\n<img decoding=\"async\" src=\"https:\/\/www.utsuwa-hanada.jp\/hanada\/wp-content\/uploads\/2022\/08\/20220803-1_08.jpg\" alt=\"Dear Likers Episode #001 Pepper\"> \r\n \r\n<p class=\"browntext\">\uff0d\uff1aIt seems your pepper mills will continue to evolve.<\/p> \r\n \r\n<p><strong>Shohei Uchiyama:<\/strong>Not long ago, I happened to see one of my early mills owned by a customer. It wasn\u2019t particularly refined, but it was endearing. That struck me.<br> \r\nMy wife said, \u201cYou\u2019ve become too skilled.\u201d A certain looseness\u2014something that invites affection\u2014is important too.<\/p> \r\n \r\n<img decoding=\"async\" src=\"https:\/\/www.utsuwa-hanada.jp\/hanada\/wp-content\/uploads\/2022\/08\/20220803-1_09.jpg\" alt=\"Dear Likers Episode #001 Pepper\"> \r\n \r\n<h3>Nothing but Good Things<\/h3> \r\n<p class=\"browntext\">\uff0d\uff1aIt\u2019s been two years since you began making pepper mills.<\/p> \r\n \r\n<p><strong>Shohei Uchiyama:<\/strong>I\u2019m glad I started immediately when I felt the urge to try. \r\nThere are many things that don\u2019t go smoothly, but it\u2019s enjoyable.<br> \r\nIt may sound carefree, but since I began making pepper mills, nothing but good things have happened.<\/p> \r\n \r\n<img decoding=\"async\" src=\"https:\/\/www.utsuwa-hanada.jp\/hanada\/wp-content\/uploads\/2022\/08\/20220803-1_10.jpg\" alt=\"Dear Likers Episode #001 Pepper\"> \r\n \r\n<p class=\"browntext\">\uff0d\uff1aEveryone has many things they would like to try. Actually beginning is what makes it remarkable.<\/p> \r\n \r\n<p><strong>Shohei Uchiyama:<\/strong>In the beginning, I kept wondering, \u201cWho would ever buy something like this?\u201d as I made them.  Because I started simply out of love for pepper, I never thought about making a living from it or becoming popular. That may have helped.<br> \r\nRecently people tell me, \u201cYou found a good niche,\u201d but that wasn\u2019t my intention. Even if it hadn\u2019t been a \u201cgood niche,\u201d I would have continued.
